The saint's name is written 'Selimus', but no saint with this name seems to appear in the Acta Sanctorum. Perhaps, the hermit Helenus or Hellen was meant - he rode on a Crocodile, and devils tempted him with honey and apples during a fast, at the end of which he was nourished by angels.
